Helicoil Kits

I've got a damaged M12 x 1.25 thread that needs repairing before 2am when I leave the country and can only find M12 x 1.75 kits (tap, drill bit and helicoils in one)

I assume this process involves drilling out and tapping larger (to 13?) and the helicoil then brings it back down a size (to 12?)

The pitch size shouldn't matter correct?

As long as you've got the right length 1.75 threaded bolt to go into it you're fine. The drilling will remove whatever was there before, the tap will cut the 1.75 pitch and you'll fill it with the coil.
