how easy is it to get a tyre off a rim ? i've never tried it and never paid much attention to how they remove them in a tyre shop
they're useless tyres so i have considered cutting them off but no idea if that is likely to result in something like a highly tensed bead springing open and trying to cut off my arm

i find the worst part is breaking the bead off the rim, for the sake of a few £££'s a small tyre place will remove them in seconds (ok minutes)

As said, breaking the bead is the hard part.
If tyre is scrap you could cut most off (side wall is very thin, cuts easily with a "Stanley" knife) then the remainder can be hammered into the well with a big hammer and a good piece of wood ideally. From there you could either cut it (it won't spring open) or remove with tyre levers.
By cutting most of the tyre off the whole thing won't "spring" about as you hit it and bead should break much easier.
Seriously, How much to remove and dispose of the tyres (8 quid each? 10?), and how much do you value your own time and sanity? I guarantee that you're better off letting the workshop do it. Even if you do remove the tyres yourself, you'll have to pay for their proper disposal- a cost which is presumably included in the garage's price and is probably a quid or two per tyre. So what are you saving? five quid per wheel? six? for all that extra time, dirt, damage, hassle...
