I'm looking for some advice in regards to servicing my 2005 mk2 Ranger.

The previous owner was a mechanic so he kept the vehicle very tidy. However, since purchasing the truck 2 years ago, all I have done myself is changed the diff and engine oils, the oil and air filters, re-sealed the sump and changed a CV joint seal due to some minor leaks. I think my spark plugs also need changing now which I shall go ahead and do.

I'm not a mechanic by any means, but do roughly know my way around a car. However I am unsure as how to undertake a full service as opposed to waiting for things to go wrong, obviously a bad idea! What else do I need to check and grease/replace as part of a service routine?

I'm umm'ing and ahh'ing whether to take the truck to my local 4x4 service centre. They charge roughly £200 for a 'full' service. But what will they actually do for this price which I couldn't do myself?

You should be able to find, either in an owners manual or on the internet, the service schedule for the car. That will tell you all the main items that would be changed or replaced in the service. Start with them and then get a list of things to wiggle, poke and look at.
