Ash, it depends on what you want to do, if its to help Science and an individual/Individuals you could leave a donation to a specific University Involved in Space Science, The Open University is one, another root could be someone like Teledyne e2V https://www.e2v.com/markets/space/ specifically within the R&D. But a University would probably be a much safer place for R&D donation.

If it helps support an individual in the form of a bursary such as a researcher studying for a doctorate within the field that may also be something else to consider.

I have done the latter but how and what only you can decide.

How about the British Interplanetary Society? It's a well established society going back many years and is well thought of.
