Looks nice - but I think there might be a bit of double exposure and image mixing going on. If a camera is set to enable it to show the lights of cities in earth - or even what looks like the sun in one set of images - I doubt that the aperture setting would allow the stars to be visible as well.

You're reading far too much into that and missing the point. It's an enjoyable video, very peaceful to watch and see how beautiful the near universe and our planet is. Also gives an insight of an astronauts view of earth from the ISS. I don't care for the image production.Except I don't think it represents what you can actually see - even with the naked eye.
Most astronauts will tell you that it is extremely hard to see anything except the brightest stars unless you are over the night side of the earth AND there is an absence of multiple light sources - such as cities, aurorae etc. So, passes over large desert areas , the Indian Ocean and the Pacific Ocean are good. Passes over built up areas aren't so great.
The absolute BEST place to observe stars from space is the night side of the moon - especially that part of the night side that isn't facing earth.
