I am sure someone will be along with the exact reason. My thinking is that being a Rally devised car, its simply there for protection if you had it on rough roads, ie Rallying? and to keep the crap out the Engine bay. It will also improve the Aerodynamics of the Car, like it does on my Lotus that is fully covered underneath.
I'd leave it on, if thats possible, but removing it is not gona cause you any major issues, thats unless you use it off road where you could end up with a burst sump.

It does keep all the crap out of the engine bay but more importantly it aids in directing airflow through the engine bay and out underneath down the back of the engine and under the car.
I did hear it helped reduce high speed lift, not something i've experienced with or without the undertray. I have to say mine is off at the moment but perhaps i should put it back on, if anything because the warmer weather is here and keeping these engines cool is a priority when they are being worked hard.

They were fitted to 97 on UK cars and 98 on JDM cars.
The official purpose was to help undederbody flow, but the real main benefit was in keeping dust out of the engine bay. A lot of people used to remove them in the early days (circa 1999/2000) after some of the early tuners (BRD/Scoobysports/Lateral etc..) and track day enthusiasts did some R&D and proved up to a 5 degree drop in oil temps when driven hard on track without one.
Its also much quicker to undertake a regular pre and post trackday oil change, if you dont have to undo it every time.
