Towing from Bilbao to ronda in winter

So going to Spain with caravan in January, ferry to Bilbao.
Wanting to go south.
Route on google maps goes:- Bilbao - Salamanca- Caceres-Seville-Ronda.
Am I likely to hit any snow?
Where are good places to visit en route?
On the South coast we know we want to see Ronda/ Granada. Where is else is good to go? We like walking/ canoeing/ visiting old towns. Not at all interested in all day English breakfast places!!

I did something similar last year. I drove from Calais to Tarifa between 18th December and Christmas day. I entered Spain at Irun, and went to Pamplona, Salamanca and Seville, and then spent a few weeks dicking about in Portugal and Spain before returning during the bloody farmers protests in early February.
The Spanish appear to be very well prepared for snow across the high area in the middle, with huge parking areas dedicated to road closures.
I came back into Spain on 5th January at Merida, then headed east along the coast. I was in Ronda on 13th January in beautiful sunshine.
I drive a 1994 Hymer, so probably travelled at about the same speed that you will with a caravan. The only issue I had was that the border police at Andorra wouldn't let me in because I didn't have winter tyres on.
This was on 25th January in Puigcerda, about 25 miles, as the crow flies, from Andorra.
If you can be bothered, Elvas, just over the in Portugal border about half way between Salamanca and Seville, is a beautiful old city.

I drove down to Marbella during the first week of January for 18-years.
Only 2013 was really bad -13C in Burgos. The amazing thing was that Spanish authorities are fully prepared for it. Salt silos every junction and trucks constantly on standby. I only used Autovias, so no idea about small passes.
Only when we got to Anadalucia were the roads really bad - obviously different priorities and drivers who normally speed everywhere, suddenly become timid.
Early morning frost was a regular - you cannot take the road conditions for granted, but they deal with them far better than the UK.

Thanks for the replies. Much appreciated. We went from Santander across to south of Barcelona last Jan with no problems. Good to hear that the route down the middle should be ok.
I do have cross climates on the car as well.
