If any of you are a geek/gym-chimp combo then I've found a smashing app: Gym Buddy - Click. Once you've spent some time setting it up, which it needs, it's great. Especially if you like stats. Which I do. For me, the best paid-for app so far.
I've been using iFitness to track everything I do. I get everything in a nice interface and graphs, and I can even send all my workouts to my e-mail in PDF format.
I like to keep it retro and write all my gym stuff in a small moleskine notebook, I love my technology but if i took it into the gym i'd probably break it
