Breakfast Mon-Fri: Porage & Wholemeal toast with spread
Lunch Mon-Fri: Sandwich, various fillings
Evening Mon-Thurs: Various fruit as and when hungry
Breakfast Sat-Sun: Cooked breakfast
Lunch Sat-Sun: Whatever, if needed
Dinner Fri-Sun: 'Proper' dinner (i.e. meat/fish, veg, pots, pasta, whatever)
Would a diet like this miss any of the important food groups? Do you think you would miss the 'proper' dinner Mon-thurs if you tried it?

It's akin to a low carb diet and not very good for you. I don't know how it would affect your health given that you have carbs at the weekend. Complete guess would suggest that ketosis would start to kick in then stop so you might not burn fat as well as with a proper low carb diet but you'll get the knackered effects and bad breath of the early stages of the low carb diet.
