I'm trying to lose a bit of fat. I go the gym pretty much every day lifting weights and i do around 2-3 '3 mile' runs per week aswell as swimming once a week. I'm currently 13 stone which is a stone heavier than the beginning of the year, i'm hoping a lot is muscle build up. But knowing you only really put on 8lbs per year it can't be.
Anyway to the point..... I've been trying to change my diet, so eating lots of chicken and fish. I think my problems lie in with carbs and cheese. I have cheese sandwhiches every day at work which i need to change. And in the evenings i will probably have rice for 2 days each week and pasta for 2 days. I know these are complex carbs but what else can i eat that will help burn fat whilst still building/holding muscle?

Rather then using your weight as a guide use your body fat %. An instructor in your gym should be able to give you an indication of what it is. That way you can monitor your muscle gain and fat loss.
Also there is no rule about how much muscle you can put on in a year. In the beginning stages if you have never trained before you will develop quicker.
Diet: swap the cheese for low fat cottage cheese, good source of protein and low kcal. I wouldn't avoid carbs, you need them to fuel your body. Just keep up the hard work at the gym and stick to a balanced diet and the results will come.

I'm trying to avoid carbs as much as i can, even if it's cutting down slightly on portions. I did my BMI and body fat percentage at the gym couple of days ago. Part of the reasoning for putting more cardio into my training again. I've just been heavy lifting and had cut out cardio. Now i'm doing 20 minutes a night cardio after my weights session. Just really don't want to lose any size or strength.
