Which day would you fast?

I tried intermittent fasting a few years ago and would like to do so again, one day a week. However, I'm training more than I was back then, so wondering when and how to fit it in. Essentially, I do heavy compound lifts Monday and Friday, and cardio (bag & KBs) on a Wednesday. LISS (dog walking) every day. Sunday makes the most sense I guess, but that would mean no roast, so I'm leaning towards Thursday.
