Puglia, Italy - Any tips?

I was in Puglia a couple of years ago. A beautiful part of the world. Did not really do much sight seeing as it was a relaxing week away sitting by the pool doing nothing!
I only used the car to get shopping, and to and from restaurants. It was a Focus Estate and then some awful Lancia thing - so I was doing as little driving as possible. Puglia is famous for it's "turret houses" http://www.trullipuglia.com/ - so try to get in one of them if you can.
Alberobello was the closest town we stayed near, and was a very pretty (if small) town. Great food! However if there is one place you have to go - one of the best bars I have ever been in - is in a town called Polignano a Mare, and is hidden away, but hotel called HOTEL GROTTA PALAZZESE. Go at night.

I live in Northen Italy so can't offer any specific tips but I can tell you where to find the best food.
When travelling around keep your eyes peeled for 'Agriturismo' signs, these are small family run resturants, sometimes with accomodation.
They are usually part of a farm and serve the tastiest food you will find. Everything will be local in season produce, sometimes the kitchen is attached to the dining area so you can see everything being made. Prices are very reasonable.
One more tip, don't over do the first few courses as they can go on a bit and there is never a shortage.
