Celebration Hotel and Dinner

So guys and gals over to you !
I am looking for somewhere very very special to take my wife for a evening away. Have looked at London for Hotel and show (Ritz etc) and looked at Country House Hotels as well. No real celebration but want to take her away.
Thought I would ask the all knowlegdeable PH and see what is to be recomended ?
Happy to travel (we are in the south) happy to fly and rent a car (Scotland + Ireland). Looking for ideas and inspiration.
Don't want to spend a stupid amount but happy to splash out !

Website doesn't do it justic really. It's the only hotel I've stayed in in Edinburgh as I live here. Dark gothic, great location. About £300 a night but you won't need to rent a car.

How about Rhinefield House and Spa in the New Forest?

I stayed in their best suite which was very nice if a little expensive!

Handpicked also have some other rather nice places to stay ....
