My wife is dying to go on one of these with a friend either this Autumn or the following Spring ( I can't go as I retain zero balance since a near fatal cycling accident). Has anyone done one of these and if so could they recommend an operator/guide ?
I think that the idea is to avoid the larger places like Bari/Brindisi and aim for Ostuni/Alberobello and the like. Any thoughts much appreciated.

I've not done one in Puglia but have in Tuscany and it was bloody brilliant.

I'd jump at doing another. Absolutely fabulous way to explore.

All booked. She now needs to do her day course in Kendal and get her head around riding on the "wrong" side of the road in Italy ! She has history here having written my car off in Normandy whilst negotiating a roundabout the UK way !!
