Brugges/Belgium hotel finding tips? Local website?

Google "Best hotels in Brugges" and then scroll down until you come to the Telegraph. It might be a single page, or it might be 5 or 6 pages.
Take a look through and see which hotel(s) you like the look of, but ignore the prices on the Telegraph site, they're always way off. Then go direct to the hotels you like the look of and see how much they really cost for the dates you're interested in and the room type you want. Then book direct with the hotel.
Or, use booking.com to find hotels you like the look of, or their map view to find hotels in roughly the right area, then go direct to the hotel website and book from there.
I know some people swear by using a middleman / consolidator, but I always book direct with the place I'm staying.

I almost never find a better deal direct with the hotel. When you add in the cashback (TCB, quidco etc) and the rewards schemes on the hotel websites, they can work out significantly cheaper.Anyway we stayed at the Novotel last year, the lobby area looked like it was newly refurbed and was a nice hotel. No issues with the underground car park with a large car either.

We stayed here - it was a fantastic B&B just away from the touristy bits but well within walking distance of everything you need.
