London with an elderly parent - hotels/restaurants?

My dear old mum hasn't been to London since she was a child which is slightly bonkers.
It's probably pushing it a bit to do a day trip and see too much and I'm not sure rushing her around on the tube is super practical so I was thinking perhaps get a train down on and stay overnight and just slow the pace a little.
Any suggestions on a hotel that might be an "experience" but that isn't ridiculous money please? Thinking perhaps with a decent restaurant as again she may not want to be dragged around London at night.
I don't know if a room with two bedrooms v two separate rooms is a thing anywhere and if it's any more cost effective.

Can’t help with hotel suggestions, but when I took my mum to London, at age 80, last year I found it was much easier for her to use buses rather than the underground. It removes the hassle of having to navigate tapping in & out thru the turnstiles and countless escalators and steps, and OAP bus passes can be used as well.
Im taking my dad to London to see a show and we are staying at the H10 in Waterloo. Seemed a good deal with breakfast included and a roof top terrace. I've never stayed there before but dad was shocked by the prices so seemed a good compromise. We will probably taxi to the show but I'm hoping to either do a hop on bus or boat trip.

I'm clueless on hotels as usually it's a Premier Inn or similar and I have no idea with London what's worth paying for v what is simply a name.
I suspected it may be two rooms are cheaper which is fair enough.

I am significantly older than your mother. Age, in itself, is not the problem.I think tapping a credit card in and out is no problem.
Many TFL stations are now step free.

Don't bother, just catch a number 11 bus. You will see all (most of) the sights from a number 11. If she has a bus pass it's free.How about one of those numerous Hop on Hop Off Sightseeing buses?
