All inclusive in late November recommendations please

My wife has a very mentally taxing job and so likes to spend one week a year switching her brain off entirely, around her birthday so mid to late November.
A week at an all inclusive has worked well for this for the past couple of years. She can spend her week sitting next to a pool/ on a beach, reading a book, not having to worry about where her next meal comes from.
Last year we went to Morocco, (taghazout) and the temperature was perfect, and cost £850pp for 7 nights all inclusive, at a hotel that was modern and clean, food was good, nice pools, the staff were nice etc.
I sit in the shade and go a bit stir crazy, so somewhere with access to good excursions is probably a good idea.
We also don’t actually drink that much alcohol on these holidays so are wondering if full board would be a better idea; but we’ve yet to see any that are much cheaper than all inclusive, so once you have a couple of drinks with dinner you’d be worse off.
Can a PHer recommend a good location for an all inclusive in Mid/late November where it is still warm enough so sit in the shade all day? We’d probably be willing to go up to £2.5k all in if somewhere was really nice. But under £2k would be better of course. Adults only is preferred but not mandatory.
We don’t want to go to the Gulf states, so they are out. Canaries are a bit too cool that time of year (we tried fuerteventura already).
