So where would you suggest?
Going in January for 10-12 weeks.
Budget £6000 for two, to include getting there from uk, accommodation, car hire there, if reqd. But not including food and spending money.
Likes:- countryside, old buildings, museums etc. Not interested in bars, nightlife etc.

Or get a cheap flight to Thailand and rent a beach hut smile

Montenegro?

Medieval towns like Kotor, stunning mountains, affordable long-term rentals (£300-500/month)

I would second Montenegro - brilliant place - though might be a bit chilly in places in January.

If you want to be more adventurous then Armenia and various of the 'Stans can also be good.

10-12 weeks? That's a long time to stay in any one place, let alone Cyprus or Montenegro smile
Head to SE Asia, it will be warm, plenty to see and do and cheap as chips.

Cambodia?
Siem reap - old buildings galore / Angkor Wats smile, countryside outside the city/ great lake Tonle Sap
Phnom Penn - lots of history inc.Khmer Rouge.

Maybe mix it up with a trip across the border to Vietnam to learn about the war / Mekong delta?

(Note, you may encounter quite a few bars in these resorts, but entry is entirely optional!)

Chile

Beautiful, out of the ordinary, mostly Brit friendly.

Usual caveats about travelling in South America but your money will go a long way and you won't meet anyone at a dinner party who as also been there!

Wouldn't say Chile was that cheap, but it is a fantastic place, without the same risks of the majority of the rest of South America.

I'd go with the Vietnam, Cambodia, Thailand, loads of history and places to see, and so so cheap, that £6k will get you a very plush 10-12 weeks out there.

First stop Switzerland,then go where you like?
South east Asia would need a visa or month in each country? Can highly recommend Philippines that time of year,also got historical interests,fort drum Manila,Intermuros,preserved Spanish town Manila

Europe: Bosnia, Montenegro, Albania, North Macedonia.

Hard to look past a combination of Thailand, Cambodia and Vietnam at that time of year for that duration though.
