Where to go - 50th birthday holiday

Hi,
After some recommendations on where to go for a big holiday - I'm struggling for ideas at the moment so any ideas will be gratefully received
We will be going as a family including our kids who will be 6 & 8. We can go from mid July / Aug prob for 2-3 weeks max
I prefer different cultures than Europe and have been to Japan, China, India as examples before
I'm currently researching Vietnam as an example. Not a beach holiday family but some time on the beach is fine
We have also considered a safari but my youngest has a propensity to moan so I think it might be a non-starter

We spent some time in Malaysia last year and it was fabulous...I'd go back in a heartbeat. With a couple of youngish kids a Malaysian tour (KL, Malacca, Cameron Highlands, Penang etc) plus a few days in Singapore could be put together to include big city sights, culture, wildlife and a bit of beach - something for everyone. We found the locals wonderful, it was amazing value (except Sing, which was quite pricey) and a very pleasant place to be in general. It is hot and humid all year round though.
I took my wife and kids to Grosmont and went to the pub for a couple of days
However, depends on what you want I love Italy, lovely to drive around, amazing people and sights!
Japan is a plan and would be very different, or as you say Vietnam, some friends went this year and loved it!

Mrs. DG and I went to Vietnam last September for 5 weeks, most of the travel was done by train through choice. We enjoyed the train travel, but the rolling stock is somewhat antiquated. Domestic flights are often cheaper.
Cost wise it’s fairly inexpensive, so there are many options for travel types. Cuisine, there are many options, the local food is excellent, restaurants all seemed clean, staffed by friendly people. Accommodation plentiful and available at all budgets, we stayed in some cheap but very comfortable and clean hotels
Most of the scenery is breathtaking, especially in the mountains to the North. Coming from the UK, I’d probably fly to Hanoi, take the train/bus to mountains in the North, then the train and make my way South, only travelling in day light hours so you can take in the sights.
Then fly back fro Ho Chi Minh city or take a domestic flight back to Hanoi.
Note, I'm mid 60's with mobility problems.

So if different culture then China is a great place to go, so many different things to see and try, i did a month there and for sure did not scratch the surface at all, its also fairly simple to get around on the trains etc
Or the US? at that age maybe your kids will like the big road trip to Yellow Stone/ grand canyon/ Niagra falls etc (so many National parks to chose to see!)
Or even perhaps a trip to Disney for them ? (i know its your 50th but..)

I'm looking forward to doing some more interesting holidays when my kids are a bit older-they're currently 8 and 5 they fly well but probably won't consider longer haul until the youngest is a couple of years older. Anything I would suggest I can't imagine gelling well with younger kids, doing cultural stuff in hot and humid weather, my two would get fed up after a day or two. Vietnam and Thailand could be doable spending sometime at a beach resort and they're geared up for tourists with lots of activities although the kids ages may limit somethings.
Safari is doable but it's the Southern hemisphere winter still pleasant during the day but chilly first thing in the morning and evening when you normally do the Safari. You could spend sometime in South Africa e.g. drive the garden route and either fly to Kruger for a safari or go to Botswana. Negligible time difference in SA (+1hr) so no jet lag to worry about.
