The Seville Cathedral rooftop tour is good. Try to book the last one of the day, then when you come back down you exit through an empty cathedral.
Other than that, drink plenty of sherry and eat lots of tapas.
Cool - there's one on the Friday at 8:30pm. None on Saturday and I'll hopefully be at the football on Sunday, so Friday it is then Other than that, drink plenty of sherry and eat lots of tapas.

I'll check out the tapas place as it's only a 5 minute walk from my hotel and will head to the market as well if I get time
Edit - I reckon I can do the market at 8:00 for an hour or so before the walking tour at 10:30 and have time for a churro

The guided walk ends at Plaza Espana.
The other pavilions in the park are worth exploring plus there is also plenty of shade in the park. In the heat of the day. Its worth remembering that peak season in Seville is March, April, May for a reason. We were there mid-March and it was 26C

We were there about 5 years ago and really enjoyed it. The alcazar and cathedral are both worth a look; also the Roman museum at the Setas de Sevilla is pretty interesting if you're into that. I think my favourite bar was Casa Vizcaino purely because they keep track of your tab with chalk on the bar.
We booked on a walking tour but after about an hour of walking to different hotels collecting people without any actual tour stuff we just drifted off and had a couple of cañas and some tapas. It's one of those places where there's always something interesting to see around the next corner.

These 3 places were all great.
Bar Santa Ana, Calle Pureza near Real Parroquia de Señora Santa Ana - Very nice Tapas bar in Triana, be aware - kitchen closes at 11pm.
El Rinconcillo, Calle Gerona - the oldest Tapas bar in Seville (Spain?), as featured on Rick Stein. Definitely worth a visit.
Perro Viejo, off Calle Lerana near Setas. Not really Spanish, but really nice food.
