Me and my dad want to take out 63 Healey 3000 across into Europe, my dad is a well seasoned traveler and has seen most car related things in France and surrounding countries but I’m interested to hear if anyone has any must do suggestions, I only have 4 nights spare so we don’t have an abundance of time across there.

Depends if you are focused on driving per se, or specific destinations, or a compromise between the two.
Bear in mind that French cities, Rheims, Dijon Grenoble etc do not exempt classic/historics from the emission restrictions, so technically you can't take the big Healey into main towns.
Germany is fine, just carry the v5 showing historic status.

For driving, I would peage it out of Pas De Calais, then department roads are all good around from Troyes and Dijon and south.
Most high Alpine passes are closed until June, so up to then there are less options. Vosges, Jura, Kaiserstuhl and Black Forest all have cracking roads if you don't have time for the Alps, and also don't forget most German roads off the beaten track are very good, especially in Baveria, with 60mph limits.
As for destinations, I am not a motor museum guy, so others could point out some options. Personally I would include a war museum. The French/German cemeteries around Verdun are well worth a visit, or closer to home the ww1 museum at Souchez and the Cabaret Rouge Commonwealth Cemetery.

Depending on where you live and what time you can finish work on the day before you leave, then I'd think about an overnight ferry - either Harwich -> Hook of Holland or Portsmouth -> St. Malo. That way you don't waste 1/2 of the first day with the drive to Folkstone and the hour time difference.

It also means you end up starting from a different point in Europe.
