London 1 night

We will be landing at Gatwick at 2pm in the afternoon and flying from heathrow T3 the following evening, so need to be there at 6pm. We are looking for a hotel in London with easy access from Gatwick to Heathrow. We would like to do a bit of sightseeing while in London. Any recommendations.

So, you can choose wherever you wish. Your hotel will look after your bags.
Time spent travelling is time wasted so I would suggest the Clermont at Victoria Station, you get off the Gatwick Express and walk straight into the hotel which is pretty decent and the bonus is that you can leave your luggage there free for the day after you have checked out.
The Coach Station with direct coaches to Heathrow is just around the corner or you can get there quite easily by tube with only one or two connections depending on which terminal you're flying out of.
A lot of London's attractions are also only a short tube or bus ride away from Victoria and there are plenty of restaurants nearby.

Personally I'd stay closer to Gatwick and commute up the following day as most hotels kick you out by 12, giving you loads of time even if you take the train.

Direct trains from Gatwick to London Victoria (Southern, Gatwick Express), and direct train to London Bridge (Thameslink).
Victoria for proximity to Hyde Park, Buckingham Palace, West End.
London Bridge for Tower Bridge, Tower of London, Thames attractions.
Heathrow can be reached by Piccadilly Line tube or more preferably the newer Elizabeth Line.

Usually I fly long haul so you don't think of doing anything else.

I'd actually suggest using the Thameslink train up to Farringdon, which is where there's a direct elizabeth line service to all the heathrow terminals. The nearest (sensible) hotel option to do that (near farringdon) is obviously up to the chaps budget, but as he's looking at public transport I'd suggest the lower end of the spectrum, which would be something like https://www.premierinn.com/gb/en/hotels/england/gr... -- a clean but not impressive hotel. @op: this location is about 5 minutes walk from St. Pauls Cathedral and gives easy access to many of the London landmarks (tower bridge, tower of london, the london eye, houses of parliament, etc -- although as others have posted lots of stuff will be closed on a Sunday evening by the time you get up to London).

The tube or Heathrow Express go directly to the terminals.
If you want to do something going into London is your best bet. If you're sandwiching some sleep between long haul flights, get a premier Inn near a train station.
Tower of London is great, Harrods is nice to look around has some nice/(relativly, you are in mayfair) good value restraunts, if you like shopping. London Eye is good if you like a good view, Shard is better but a bit further away/expensive. London Dungeons are good fun, a bit 'touristy', HMS Belfast is fantastic. I'd leave Madamme Tussauds alone. Best park is Hyde Park, get off the tube at Green Park, walk past the Ritz, go to Green Park and walk towards Bucknigham Palace. It's worth dropping into one of the nice hotels for a drink in the bar.

Thank for the suggestion, just what we were looking for. I think maybe have a think about where you want to visit in London and look for hotels in that area, most will let you leave your bags even after check out.
Even with the tube, it makes little sense to stay by the Tower if all you want to see is West End.
IMHO Citizen M hotels are really nice in London and offer decent value.

You don't have long so don't want to waste time travelling back on yourself to get to/from hotels so, as someone else said Thameslink from Gatwick to Farringdon/Elizabeth Line from Farringdon to Heathrow - and a hotel anywhere on that route that's near to things you'd be interested in doing in London.
There are also plenty of left luggage places in London, so you don't have to lug your luggage around everywhere with you.
