Rhodes - what to do?

Anyone got any recommendations for stuff do see/do/explore on Rhodes? We'll be there first week of October, which should still be warm but without the mad crowds, and are staying in Lindos. Will have a car, so anywhere on the island is good. Restaurants, historical sites, secluded beaches or nice scenery all appreciated.

I went to Lindos for a mates wedding, we went for the day to Rhodes had a few beers around the old town, I went scuba diving, none of the rest of the group wanted to do it. We didn't have a car unfortunately.

Rhodes has ancient, medieval, and beaches. It's not big. You can do the whole island in 5 days.

Lindos is the famous all white ex fishing village with the Acropolis above.
Rhodes Old Town is medieval, with a port and a maze of narrow backstreets. Lots of restaurants and tourist shops.
Rhodes Acropolis and stadium isn't that far away. You can walk from Old Town if you are fit.
Symi island is a ferry trip away - a multi coloured village to contrast.
A day on the beach.

There are more medieval and ancient sites if you want. Renting a car is the best way around.
