France + Spain - Summer '24 - Itinerary Help

We're going to be spending 5 weeks next summer driving around France & Spain, and there are a couple of areas in the itinerary where I'd like some recommendations on villages/ spots to spend a day or 2 on-route, that are perhaps outside of the "obvious" for the area.
Normandy
- Basically anywhere in the region, but the closer to the coasts, the better
Bordeaux
- Anywhere in the wider region
Bilbao - Seville
- Need somewhere to stay en-route. Pretty much anywhere South of Valladolid, that's not Madrid, is up for grabs
Piedmont
- Somewhere in the South of the region, between Asti and the coast.
