Good Resort/Location for a Couple

Looking for some advice from the PH experienced masses.
So here's the situation - New-ish relationship, 30's, no kids, and annoyingly I fully ruptured my achilles in April, and currently doing physio - e.g. can't walk far.
We are looking for something all inclusive (or as close to that), good quality, good sunbathing, good drinks, nice dinners, maybe a little local town to visit, not too long a flight, e.g. Mexico/Riviera Maya is probably too far and I've been before.
I've loosely narrowed the search down to Crete, and quite like the look of one of the Mitsis resorts. Think it's called Mitsis Rinela.
However, I'm more than willing to listen to other experiences/recommendations and to save the endless googling, tripadvisor reading, etc.
Ideal days would be, warm sun, pool/beach bar, good drinks, good dinners/dinner choice, few evening drinks, and a nice room to stay in.
Any other recommendations before it's death by tripadvisor?

Daios Cove in Crete is my go to.
Cabo Verde.
Riu Karamboa hotel on Boa Vista island. Adults Only. All-inclusive. Always sun-loungers available both pool and beach.
Look at Trip Advisor for reviews. I was there last month. Exactly what you are looking for.
If you want more of a town feel, then the island of Sal but Boa Vista if chilling by the pool and beach in great weather (30C) at a genuinely nice hotel is your thing.
If feeling you want to do some exploring, the Quad Bike trips are fun.

This was number 1 from the start, but its looking more like £2400pp for the all inclusive option and £1600 for half board.

I can echo the recommendation for Boa Vista and was there in March, but just be aware that there's not much to do outside the hotel. Lovely weather, although it can get breezy (and I think the summer might be the windiest season so check if you're tempted). Frankly I'd see it more as a winter sun destination but it's certainly worth considering. PastelNata said:
