Egypt and Israel

I was lucky when working on the grey funnel line to visit both Egypt and Israel.....but now they seem to have settled down a bit, perhaps its time to take the other half and show her the joyous sites of the pyramids....downtown Cairo...Jerusalem etc. Not looking at an organized tour per se as we do like to go when and where we want. Thought of Cairo....train up to Alex and back....then train the Luxor, boat, (3/4 days) to Aswan. Flight to maybe somewhere in Israel or Jordan and do a tour of there. Maybe 3 weeks in total. Anyone done this sort of thing recently...... Did you tour private....with a group...or maybe a set tour with???...........
