We went in 2019 and did both Gozo and Malta - loved it! Although I don't know the St Julians bay area.
Valetta has the gardens and we did the War Rooms as well as Fort Rinella across the harbour. Places to eat everywhere.
We went in the summer so was mostly water based activities. Boat trips, Blue lagoon etc etc

Mdina is good, the dungeons is somehow hilarious and terrifying at the same time. There's also a cafe on the top of the walls that's worth a visit for the views, best to go outside normal mealtimes as it makes a massive difference if you can get one of the tables on the walls.
There's lots to see in Valetta but you can end up fighting with massive swarms of cruise ship passengers if you're unlucky with timing.
Comino is worth a visit if you like a walk. There's a bunch of quite eerie buildings including an abandoned pig farm with some interesting stories.
And definitely try to get out on the sea - completely agree it's the best way to see the place.

A week in Feb for 100£ flights and half board in Melleiha (basic but fun). I think it's probably the last time we flew.
Just too echo some of the comments Valletta & Mdina are must visits. The visit to the Armoury with the knights armour and the cannons was brilliant.
We travelled on the bus (bus W****kers) as the beer was too cheap and travel it was literally 1 euro anywhere.
Ate lots of Rabbit... lots of Rabbit

The newish but already shonky Chinese buses are amusing, and as said are cheap. I bought a week's ticket when I arrived at the airport and then just got the buses everywhere.
There's several museums - I liked the Fortifications Museum down by where the ferry goes from Valletta to Silema.
The WW2 underground tunnels/shelters were good too.
Lots of 'classic' '80s cars still in daily use.

I went there years ago, stayed in St Julians. Its the party part of the island, this time of year its not too bad but in August its gets swarmed with teenagers and gets pretty rowdy. The other thing to be wary of is cruise ships docking. Our last night there it was swarmed with obnoxious Americans who had just arrived. Any suggestions on places to eat and excursions?
I have no idea if they are still there but next to the Hilton (cant miss it, huge tower on the seafront), there is a Marina and that had some decent restaurants and bars, a steak house that was good and cigar bar. Note if you go there early even and its dead, dont be put off, Malta night life doesnt really start to get going until 10-11pm.
Valletta is not far from there and that's a good day trip to have a look around. Or a boat trip round the island is good, stops in the Blue Lagoon.

The amount of times I've said I'll go see that Museum and never got there. The sea life centre nearby in Qawra is pretty good too.

I Used to own a villa in Mellieha, and previously visited on holiday over twenty times,
St Julians (Paceville) is very lively in Summer months, a long weekend is not really long enough to see the myriad of interesting places on the Island, but I would suggest Valletta and the grand harbour and Mdina (Pronounced Imdina). The car museum is good if the weather is bad, there is a huge market on Sundays at Marsaxlokk.
The weather this time of the year should be lovely. (Not too hot)

We went a few years ago now and stayed close to that area , my missus asked me why there were chalk boards advertising hotel rooms by the hour , she got it when I pointed out the numerous scantily clad young ladies ,
I’m guessing it’s changed now but we enjoyed it , there was some good eating to be had and it’s great place to wander around or use the bus service.

We've been over half a dozen times, pretty much once a year until Covid.
And stayed around the St Julian's area; either in Balluta Bay (Le Meridian, now it's become The Marriott), or in Sliema (The Palace). And once in Melleiha.

I can also recommend going to Valletta on the ferry from where you are. From Balluta Bay, walk up and the down (it up hill and then down hill) Triq Manwel Dilmech, and you'll pop out on Sliema front, right next to the ferry (https://vallettaferryservices.com/). Takes about 10 minutes to whizz across the bay to Valletta.
We've also hired a car and gone to Gozo on the ferry. The thing to note is that you only pay on the way back, but when we went, there was nothing to tell you that, so there were a lot confused people in the queue (including us !).
