Orlando - no parks

Off to Orlando for next week, looking for inspiration.
We don’t do the parks other than water parks, as the kids aren’t bothered, so normally do bits of different things, like a chartered boat ride out of Clearwater, Lake Apopka, Old Town, catch a sports match etc.
Looking for ideas on other things to do this year, would love to rent a boat ourselves if anyone has any recommendations, anything a bit different would be great!

Mount Dora, crystal river for a manatee swim depending on time of the year, homosassa state park, wikiwachi springs for some real kitch Americana, bok tower gardens and lake Wales, st Augustine, pioneer village at shingle creek, basket ball or ice hockey, rodeo, Harry p leu gardens, Orlando museum in the downtown, ybor city at Tampa do a guided walking tour really interesting history

Oak ridge gun range, last time I went it was paper bin laden targets so that was a while ago, rent a jet ski, rent a swamp boat, gatorland, road trip to the keys, you need to try eating at mannys at davenport, worth the flight just for that. Winter garden is a pretty relaxing bit of sight seeing. Rent a muscle car and let rip.

I’ve had a Hellcat here in the UK so muscle is something I love.
Fly in a WW2 fighter/trainer and take control.
