Touring Spain in September

Thinking about touring Spain this September, was intended to be 2020 but we know what happened there! My intention is to take the ferry down from Portsmouth and then work our way down across Spain to head along the south coast, west to east, and then drive back up through France. Looking for suggestions on where to go/stay, routes to use etc on the way down across Spain. Don't need to be back here by any particular date so all suggestions welcome. Thoughts
