Check any places, events you are visiting. Many used to close down after NYear/January season is over, essentially for THEIR holiday. Post CoVID, though, I imagine many are trying to make up losses (if they can get the staff, lots of staff shortages around).
Seiont Manor used to be OK, but has changed ownership, so I am not sure of its situation lately.
In Caernarfon, there is The Black Boy in Caernarfon, The Celtic Royal, both central to Caernarfon, and the Royal Victoria in Llanberis. I have only eaten in these. ,The Black Boy is always packed for eating in, it used to be no booking, but after CoVID it changed, I am not sure now. ‘Sooth o’ France’ the locals call the marina (in jest).
If you intend to go to Anglesey, be aware, the Menai Bridge is closed for repairs. It should be open by then.

You could try the The Groes Inn.
Been a while since I’ve been, but it was decent food and reasonable value.
Think the Evo team used to stay there when doing group tests in Wales. The local Shell garage had the magazine article picture framed of the forecourt looking like a Ferrari dealership.

this has a good rep https://www.palehall.co.uk/. Not stayed there as its just up the road from me. Its located just off one of Snowdonias better driving roads.

And expensive! On the other hand the new premier inn in porthmadog is much cheaper and has better views.
You're much more likely to find little inns of varying charm levels than spa hotels, so it depends where you want to be! The royal oak in betws y coed always looks good.

I liked the eagles in penmachno but I'm not sure girlfriend would go for it.
