The N260 which skirts along the Pyrenees is a lovely driving road, I would head north from Barcelona then follow the N260 but it may be too long a route for your timescales and how long you want to spend in the car.
You could also head directly across to Logrono and the Rioja region if you like wine, plenty of bodegas to visit. Santander is actually a nice city as well with plenty of nice places to eat, we've stayed and eaten at Hotel Bahía Santander which was pretty good.
As per the tip above, look at the Paradors for somewhere to stay.

This restaurant is near Bilbao, a friend who is a chef says it is the best in the world.

I did San Sebastian to Barcelona some years ago, along the back roads. We stopped off overnight in Loarre, where there is also a pretty dramatic old castle to explore and we found a pretty decent hotel in the town. The scenery along that route is lovely, and the roads were very quiet.
Ha! Yes, the car and I were PH Carpool subjects about ten years ago. That Spanish trip was 2004 I think, lads' trip with lots of eating and drinking. I've taken the car back to Spain since then, but with wife and kids second time. It's a surprisingly sensible family car, done loads of trips through France and 2019 took it to Norway with the family, trying to resist the kids' pleas to see if we could Vmax it along the autobahn...
You don't say how old your daughter is. If she's of the age where eating and drinking is on the agenda, then Logrono should be on your list.
The road from Soria to Logrono is very interesting - through a mountain gorge. Lots of bends, but plenty of places to safely overtake the motorhomes and lorries.
You could then top this off with a stop in San Sebastian - it would make the journey slightly uneven - but it's a fabulous place for eating and drinking.

Thank you .. she is 14 .. I will have to file this for next time as I'm booked in the various places now. The latest Carfection review of the GT4 RS has a road we did last year that's on the way, the NA-718. It's a blast and well worth the detour and the road next to it, the NA-7130 might have been even better.
