Spanish Road Trip - Must see/do's?

Thinking of a Spanish road trip this Summer, driving down from Calais.

Having never been to Spain before, where should we be going and what should we be going to see/do?!

Ideally we want mostly get-away-from-it-all countryside, but ideally a few places close to Cities as well. We're both keen foodies so any advice in that direction will be greatly appreciated!

We'll be going for 2-3 weeks and probably don't want to stay at any single place more than 2-3 nights.

Any advice on the best route down and through the Pyrenees would be great also.

Look at the paradores website for their hotels in old castles etc.
Some fantastic areas and roads south side of the Pyrenees in the Aragon region and the Ebro.
