My idiot cat and her toilet habits

I've got a cat, a very special sort of cat, the kind of cat who is quite happy going outside or in a litter tray to do a wee, but refuses to do a poo outside or in her litter tray instead preferring the floor.
She's an idiot.
Now, I quite like my cat, she has a wonderful temperament and has not a bone of malice in her body aside from her aversion to stting in the right place.
I've got two litter trays, in separate rooms which are nice and clean. In fact one of them is ~6ft away from where she likes to crap.
I've run out of ideas to be honest, this has been going on for quite a long time and I can't work out how to crack it, so short of putting her in a pie or locking her outside I'm open to any thoughts or advice from the masses.

Similar issue with one of my cats. When she was a kitten she used a tray for ones and twos. We then went on holiday for two weeks when she was six months old. On or return she did her twos on the laminate floor next to the tray but still pee'd in the try.
I tried moving the tray, another tray in another room but nothing worked. In the end put a catflap from our dining room door into the garage, put the tray in there with a spare piece of laminate flooring next to the tray. At least now the poos are in the garage.

Have you tried products like a Feliway spray to prevent that from happening in their usual places? Also changed the litter to something else in one of the trays to see if that is the cause?
My kitten use to pee on the bed or sofa for the first two weeks, feliway spray and plugin and all issues gone.
