What is my cat up to, should I be concerned?

Never had a cat like this one, she's batty
Don't know where to start so I'll just dive in:
I thought cats are meant to sleep a lot? Ours, over this weekend, woke us up at 5 am on saturday. When we got up at 7:30 she wanted to be outside immediately. Let her out, didn't see her again properly (she burst in a couple of times mouthing off, then right back out) until 11 pm when we goaded her indoors. She then spends the night walking all over us and then around 3 AM decides its time for copious litterbox digging and sprinting about at top speed, screaming her little head off.
I know cats do this, but as far as I can work out she's doing this on little sleep and little food....We've tried just about every brand of wet food and dry food going now and still can't get her to eat a full meal. Even weeny 50g pouches of stuff that would essentially be able to go straight in a good sarnie for my lunch get left half eaten! and if the biscuits have been out for more than an couple of hours they're no good to her and they get left. (first cat we've had that doesn't seem to like steak or cooked/boiled chicken either...our old cat would have had your hand off!).
Now, as of this morning, finding when she does poo in the litterbox (assuming she goes outside a lot) its more like puddles than solid poo. So what she is actually eating when she is outside, god knows. She's obviously eating elsewhere because if she was just surviving on the little we see her eat, she'd be unable to walk. Those pouches say something like 3-4 a day for an active adult. She's eating 1, tops.
I get the feeling as well she has some kind of worry about what is going on outside. She must be outside, even in the rain (hates water any other time, but will brave torrential rain to be outside). We haven't seen another cat round our way for months. I assume its because she is out there defending her space, but its like she must be out there doing this 24/7.
Some of this is just a cat being a cat/cat logic but the main worry for us at the moment is getting her to eat/finding something she likes eating and her messy bowl movements. Thinking of keeping her in a few days, see what her poo is up to. Also thinking of getting a cat flap!
ETA : More cat logic: Won't let us within 3 feet of her during the day. As soon as we get into bed, she's all over us for fuss and attention. Is extremely good at positioning her self between us and doors open to the outside world. Very rarely gets into a position where we can get to the door first. Sometimes you just need your car to be inside. But she makes you work for it!

Sorry meant to reply a couple days ago.
There is a lot of information to take in on what you have written.
Some of what you describe seems to be some behavioural issues habits etc but under it all I would be worried re medical issues such as IBD. (Not that uncommon in cats)
Has she had a vet check recently, if not I would get her chanced over and discuss her 'quirks' with them to see if there is a link especially as she appears to have a poor appetite and abnormal faeces.
Her crying out etc can be a sign of distress/discomfort.
How old is she?

While the pouches may say 3-4 a day mine only get 1 a day plus biscuits.
Sometimes my cats will stay out a lot of the night and sleep most of the day. Sometimes they will go out all day but probably be snoozing somewhere as they can then be very active in the evening. Sometimes they will sleep longer than me though the night. There's no real logic.
