I've never done it, but I've recently replaced a bath and left the tiles in situ so this looks a lot easier.
They're usually screwed to the wall and you may need a tool to undo the pipework from the taps from underneath if you haven't got access with a spanner. Other than that it looks straight forward to me.

They’re fairly straightforward but you might need some tap wrenches depending on the fitment.
It also helps if you’ve some isolator valves in the pipe work under the sink or nearby in the line.
It also looks like you have ridgid pipe direct to the taps so may have to use braided hoses for the new sink unless you’re lucky and the new taps line up.
