Long story, but looking in the next few months at possibilty of getting my own flat, but in no rush.
Currently sharing a house as a lodger, but recently moved from the last place I was at as because the person who's place it was, was a few screws loose to be very tactful, plus found she was claiming single person occupancy so I wasn't on electoral roll if I wanted to apply for a mortgage.
At new place chap will be declaring me on the council tax (and thus electoral roll) this month.
Having moved a couple of times in the last couple of years I send my bank details to my mothers address, so it doesn't go amiss.

If I apply for a mortgage do I need to have bank account at same address as where I would be on electoral roll, would rather leave it going to my mums address.

If a lender can't find you on the Electoral role, then they will be dubious about lending to you. (This will have a negative effect on your credit score form the banks point of view.)
Equally if they can't find any other records which relate you to your mum's address, they will not be able to see any credit history, which will also go against you.

Could you not just stay on the electoral roll at your Mum's address - or does she need to be shown as the sole occupant at her house?

If I am registered at my new address Electoral roll wise would it matter if bank details get sent to my mums?

Yep Mums the sole occupant at her address so able to claim the single occupancy council tax discount, plus it was rented to her by her landlord as such.

We had a similar situation when we got our mortgage.

Missus had her bank account still registered to her dads house - we were renting.

Not a massive issue, just got a call from the MC asking about the 'ouststanding credit' we had at previous addresses - explained what it was (exactly what you have, bank account registered to parents house rather than rented properties) more than happy with the reply, application progressed.

It might affect your credit score slightly but if you're in generally good shape it should be OK.
