Not sure where you are off to, but on my visits to Tobago and Antigua the locals all preffered US, they weren't keen on EC unless a last resort. When I went back the following year I hardly took any EC at all.
I got my EC delivered from my bank both times, didn't bother shopping around to be honest.

It's been a while since I was there, but I think prices in restaurants and the like are quoted in US$. Can't remember paying a visa on entry.
We were followed around for a while by a one-legged man who wanted us to give him money however.
Also, the taxi driver from the airport got stroppy because I didn't give him enough of a tip.

US$ is accepted pretty much everyone, but I seem to recall that it was slightly more advantageous to use EC$. EC$ - US$ rate is pegged at 2.7 - see what rates you can get for US$ and EC$ and work it out from there.
