Apple, Amazon, Netflix etc.. What do you suggest?

I'd avoid adding netflix through sky. The hassle you'll save when you want to cancel it will be worth the tiny amount extra you'd pay direct with Netflix.

You'll want to research what box sets and films you like each platform has and then decide which one to subscribe to. Prime can be good value as other than the Amazon delivery benefits you also get some live sport.

I have Apple TV and dip in and out for films and the odd box set. Never watched Amazon, and won’t pay for anything else.

Sky recently upgraded me at no cost to Sky Q UHD (1TB box) and reduced my monthly at the same time. There’s a fair amount of back catalogue on Sky Q, I haven’t needed to dip into the other streaming services to stay entertained. I do have the TNT sports (formerly BT sport) and some overseas sports streaming

If you get Sky Movies you'll get Paramount+ with it, there's often stuff on there worth watching. My opinions on the others:
Netflix - loads on there, mostly dross until there's a fantastic series
Disney+ - great if you like Star Wars and Marvel
Amazon - not a huge amount on there and most of it is pretty meh until there's a fantastic series (The Boys, Clarkson's Farm)
Apple - not much there but what is there is normally really good.

I'd go with the suggestion above and try one at a time for a month or two and see which one suits you best, FWIW we keep Netflix and Apple subscription up alongside our Sky, the others we have dropped.

Disney+ is ok, only use it as use sister in laws login
AppleTv - Now ‘free’ with my Barclays Bank account
Prime has a few things, have it anyway for the deliveries.
Discovery+, still free from my SkyTv that I stopped 5 years ago!
Netflix, was ok, stopped it when couldn’t share with my daughter.
Lots of free apps eg STV, but i guess their content is on Sky anyway
