There are sometimes huge discrepancies between fan and professional reviews and scores on Rotten Tomatoes. Which one do you give more importance to? Neither?

I'd go by the fan reviews most of the time. You have something like the Acolyte though, which has critics at 85% and fans at 15%, when it should be around 50%. I'm also watching Sense8 which is at 85% for both.

What makes them 'professional reviews'? They write more reviews? Some films/movies, which got great critical acclaim, I thought WTF; but I'm not very artistic.

I find audience score is a far better reflection. The paid reviewers are not going to bite the hands that feed them. Audience score <50% is unlikely to get a watch.

Ignore them all, just watch stuff and decide if you like it.

Generally if there is a big difference between the two I’m a bit wary.

We don’t go to the cinema that often and I would be annoyed to take the time and suffer the expense to see something I really didn’t like.

A review is a matter of opinion ergo there is no objective measure of accuracy.
