Robert Shaw for Jaws, could be the whole film of course but this famous scene specifically, awesome on it's own but once you learn about how hard a time they had with him and this scene specifically, Dreyfuss said after his reaction was genuine as he was in awe:

Shaw/Quint stated the date as 29th June.
The actual date was 30th of July

The 29th of June was the date that Alex Kitner was killed by the shark and was on a poster on the wall at the Town Hall.

Probably the reason for the mistake.

Have to agree with Jack Nicholson, he is brilliant in everything he does IMHO, also Sutherland as Oddball is very good

Brad Pitt as Mickey the gypsy in Snatch. Denis Farina also for cousin Avi. I could go on, Snatch is a piece of genius for me, brilliant casting throughout

I’m same with Snatch, like Midnight Run just so many endless great scenes, dialogue and characters.

Philip Seymour Hoffman.

He stole the show in so many movies, even with a bit part. His performances in Charlie Wilson's War, Capote and Almost Famous were epic. A huge loss.

I struggled to think of any that hadn't been mentioned. Probably not helped by the fact I don't tend to re-watch films, even if I really rate them. I'm sure that means I miss things a second watch might yield.

One I've not seen posted is De Niro's performance in Cape Fear.
