Home cinema room in new basement

Next week work will be starting on my enlarged basement conversion.
We will be digging out the old coal cellar and store room and creating a new floorspace of 90sq/m.
The better half has designated some space for kids play room / storage / gym. I have designated some rooom for wine cellar / office / home cinema.
We are effectivley creating one large room with 2.7m floor to ceiling. It will initially be one space which we will divide into separate rooms via stud walling, therefore we are flexible with room spaces. There will be no pillars as the whole house will be supported on 10 steel RSJs over 7m long.
I really fancy a home cinema room with a 3m screen and HD projector and 7.1 surround.
Over to you as to what you would do and what i should be looking for.
Budget flexible but not unlimited.
