With the recording function can I record one channel on freesat and watch another on freesat just like I can on sky plus?
I can't get freeview in my area properly so the above is a deal breaker, if it is not possible is there any way of making this possible?

Not with the attach a HDD record mode. Best way is to buy a Humax Foxsat HDR. Essentially sky plus for freesat.

Searching this suggests this is only 1080i is this the highest signal I can receive on freesat ?

Yes, but then so is Sky HD and Freesat HD. As the TV will deinterlace the image to 1080p then you'll still get the benefit of all the pixels on the screen being mapped 1:1. This is usually better than feeding it a 720p image and the TV upscaling (guessing) at the 'missing' pixels to fill the 1080p screen.
