I just bought a scart adaptor because my prehistoric television only has 2 scart holes (and a third purely for audio?).
So I have plugged it into the back of the tv and put my sky, Wii and something else into it.
However- say I want to watch sky- unless the other two things are turned off at the mains then they interefere with the signal and make the piacture ste. You cant have them on stand by at all.

What is wrong? Have I bnought a rubbish adaptor?
Or is that normal- in which case what is the point of them as its just as easy to swap scartd around than turn things off at the mains

You may have bought the wrong product, the type you need has a mechanical switch on it to switch between inputs (there are automatic versions available also but much mor expensive). If you have just a scart that plugs into the TV connected to a box with 2-3 or even 4 scart sockets on it then they are for just splitting the output of say a DVD player to several displays. You can use this type of adapter for what you need but you do have to turn off (usualy standby will do) all of the devices except the one you are using.

Standby definitely doesnt work. Loads of interference.
Ill have to look out for a switchable one.
Do they have a special name or simply 'scart adaptor'?

This is the scart adaptor that gamers have been buying for donkeys years, well made, no interference, full RGB compatibility on all sockets and cheap.

^^ I have one of these and its spot on. No interference at all. I run a PS2, DVD player and digibox through it.
