I know its not exactly hi-fi but I am streaming from amazon music through an echo dot connected to an amp using the dots 3.5mm audio out. The amp (fatman) only has phono jacks in so no digital input.

I've been doing a bit of googling and the general concensus is the DAC in the basic echo dot is crap. I have several echos (probably one of each) to play with. So first off, anyone know if the DAC in any of the others is any better?

And, if it is, will it make a blind bit of difference it going via an audio jack.

Finally, the amp has no tone control and the settings for the echo's (bass, treble, mid) seem to have no effect on the audio out.

Again, any comment or suggestion other than scrap the lot and start again?

People get very opinionated about DACs, but there are plenty of audio DACs you can buy from about ten quid up to 'more than I paid for my car'.
A £10 DAC IC is fairly good these days, it's not hard to get a cheap DAC which will have distortion contributions way below fairly expensive speakers.
Do you have a digital output you can feed to an external DAC?
