Rally car preparation - steering wheel, air bags, & ABS?

Some further questions concerning a BMW 323ci V Reg 2.5 2dr Coupe being modified for stage rallies yet remaining road legal:
Steering Wheel – anyone know where I can get a synthetic (non-leather/suede) steering wheel that is not too expensive and is suitable for rallying?
Air Bags – tips on removing these please? I believe it’s OK providing the MOT inspector is not awkward and allows the removal on the basis that the car has been heavily modified. Would it be a good idea though to remove the Air Bag warning bulb when the dash is removed for roll cage installation?
ABS – on a similar theme is there anything I should disable prior to competing, such as ABS or Traction Control, and can that be done simply by removing the appropriate fuse(s)?
