Let go and cross my arms across my chest. My guess is he has held on because he didn't want his arms flailing about all over the place during the roll so holding on to the steering wheel stops that, but it could have equally spun one way very quickly and snapped both his wrists. I would have taken hands off the wheel and held onto the belts personally
That's what I did when the same thing as happened to Rob happened to me, hit, span and rolled on the 'Ring, and my car was as comprehensively trashed. I can remember thinking, "This is going to hurt" as I let go with hands and feet, and curled up as much as I could. In fact, I was unhurt, except in the pocket.

I have not been in a car having such an accident but have spoken to many who have just had one and many who hope never to have one!
The generally accepted wisdom (from GTs to Caterhams and Single Seaters) is pull your legs up (if you can baring in mind you are often trying to put the brake pedal through the floor at this point!) as much as you can to be clear of the pedals and grab your belts.
I know a fair few people who always wear (regardless of if it is mandated or not) arm restraints. to prevent (as much as possible) flailing arms and squished bones.
