The Corona vaccine status management puzzle

Hi all,
My wife has moved to AD on a project as an Expat in May. We have a bit of a problem managing the whole Covid status of vaccination between UK & UAE. I am looking for experiences from fellow PHers to see if we can find a solution that works. My plan is to keep shuttling between UK & AD as I have my work here.
I have been double jabbed in UK and therefore can manage with Covid pass & pcr tests when UAE gets off the red list in future.
My wife however, had 1st dose AstraZeneca in UK mid March. In UAE they only allow Pfizer and that too with a gap of 6 months so mid September. If she has to come back to UK to get her 2nd dose, that involves £2k mandatory prison lite experience
So the question is
- have any of you been in the same sticky situation and how did you manage?
- how do you update the UK & UAE vaccine records with foreign jabs? Can NHS & Al Hosn be updated with foreign records to show double doses?
- How do you register with UK consulate as an expat- I cant see a straight process on the website.

you can get the UAE administered Pfizer added to the UK/NHS records, but this needs to be do at you UK GP. after talking to my GP in the UK he advised you will need the serial/batch number of the vaccine + the Vaccine Certificate in the UAE. The GP can then update the UK records to state you have been vaccinated.
Registering with UAE consulate i believe was discontinued some time ago.
