Dont believe the stamp thing. Used to be the case but not anymore. Loads of our journalists go there and live in Dubai, come through Dubai. You are fine to have the stamp in your passport. If you really dont want it though they can stamp a "Card" at immigration so it doesnt go in your passport.
As far as far as Tel Aviv goes, its a cool place (According to many of our writers - I havent been there). Is there a chance of any issues when you are there....yes, probably about the same change as you have of getting into trouble or problems in the UK. Keep a straight head and stay out of problem areas and am sure you will have a good time.

tel aviv was a pretty cool place. a vibrant city next to the beach, what more do you need.
not a good looking city by any means but some great bars and restaurants. you get used to guys with guns patting you down/metal detecting.
we went to an indie night which turned out to be a gay night. we'd paid 20quid in so stayed, trying to ignore the fact a gaybar got bombed the week before.
almost all israelis we met were cool, the hardcore jewish element not so much. also have never been ripped off anywhere in the world like we were in israel, almost everywhere we went. i felt as safe there as i have in any city, its got a nice vibe, very chilled.
bethlehem is rubbish, highlight being chased by gangs of schoolkids with bb guns. jerusalem was an experience but did nothing for me. the dead sea wasa highlight marred only by the drive passed the dividing wall with palestinian homes being bulldozed. managed a 14mile freewheel on the way back though, and nearly holed the sump offroading a skoda yeti in the golan heights.
i wouldn't go out of my way to go back.
