For quads, you really need to get out of the city and cruise up Hatta road. You'll need a hire car to do this or sign up for a more expensive quad safari with one of the tour operators. You probably won'd find any decent quad stuff on the web because most of the operations are fairly back-wards, Wild-West style affairs.
Drive out of Dubai towards Hatta (Hatta Road) and you'll find them after about 30-45 minutes driving.
For quads avoid any of the places on the main E44 Hatta road, they're all tourist traps with crappy bikes. Best one I've found in that area is on the old Sharjah road behind big red (turn left at the madam roundabout, then left again once you leave civilisation).
However, as you'll be visiting, those directions would probably end up with you spending a few hours getting lost in the less pretty parts of the UAE.
I've heard some excellent stuff about Arabian Nights in Abu Dhabi. It's a bit of a trek out of town, but it's a pretty decent setup http://www.arabiannights.ae/home.php
