I’ve got my jeep recently, it’s WK overland. So it’s running the 245/60r18’s they are due replacement and I’d like a bit more chunk.
There doesn’t seem to be much in that size… discoverer ATT’s seem the best of the bunch.
Will I get much more choice / tyre performance dropping down to 17rim and going something like 245/70r17 then I could get some BFG’s or discoverer AT3’s?
Will make any material different. Not doing anyhttserious just the odd trial event.

There is always a little leeway with tyre sizes. I probably would't go smaller, as in diameter. But up to an inch taller and a little wider and you'd probably be fine.
More choice in 17" than 18's, but I think you answered that with your post anyway
255/55R18 has a little more choice, including BFG, but is slightly shorter.
Or 265/60R18, which is slightly taller, but also a BFG AT size.
If worried, have a check on a Jeep forum for what size tyres the stock vehicle can take.
A difference size may slightly impact your speed, but the differences here are small and most speedo's under ready anyhow.

Yoko GO15 at Camskill in your present size.
60 aspect isn't too bad if what you attempting isn't too heavy.
Those Yoko are snowflake stamped all seasons by the way, and one of the best wet road tyres i've ever driven, have them in 65 aspect on my Prado and wouldn't hesitate to buy again, they don't come with a massive tread depth new though, BFG AT's they aint.
